I have a number of different travelling checklists (for packing beforehand) and was wondering how if there is a way to add this as a new category and if so, how to do it and add a new icon?
I used the miscellaneous category and that provided a ? as the icon.

As of now those genres are fixed but there are a number to choose from. You select the Genre for the checklist in the properties when you select the top-level node of a checklist. There is a genre Travel, see if another one makes sense, or you can set that one as Aviation as well.
